For the Pizza Cupcakes:
- 1 can refrigerated biscuit dough (8-count)
- 1 cup pizza sauce
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- ¼ cup mini pepperoni slices or chopped pepperoni
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- nonstick cooking spray
- chopped fresh basil or parsley for garnish (optional)
Instructions
- Preheat and Prepare: Preheat the oven to 375°F (190°C) and lightly grease a 12-cup muffin tin with nonstick spray.
- Prepare the Dough: Separate the biscuit dough and cut each piece in half. Press each dough half into the bottom and slightly up the sides of each muffin cup to form a small well.
- Add Toppings: Add about 1 tablespoon of pizza sauce into each cup, followed by a sprinkle of mozzarella cheese, a few pieces of pepperoni, a dash of Parmesan, and a pinch of Italian seasoning and garlic powder.
- Bake: Bake for 13–15 minutes, or until the dough is golden and cooked through and the cheese is melted and bubbly.
- Finish and Serve: Let cool slightly before removing from the muffin tin. Garnish with fresh herbs if desired and serve warm.
