- 1 3/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Wet Ingredients:
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup sour cream or plain Greek yogurt
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract (optional)
- 1/2 cup chopped pistachios (plus more for topping)

Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
In a medium bowl, whisk together the flour, pistachio pudding mix, baking powder, baking soda, and salt.
In a large mixing bowl, cream the butter and sugar. Beat in eggs, then mix in sour cream, milk, vanilla extract, and almond extract if using.
Gradually add dry ingredients to wet mixture. Fold in chopped pistachios. Pour batter into pan, top with additional pistachios, and bake for 50–60 minutes. Cool before slicing.
