- Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or aluminum foil for easy cleanup.
- Prepare Kielbasa: Slice the kielbasa into 1-inch thick rounds. Then make several shallow cuts across the top of each piece about three-quarters through to create the classic hasselback effect, being careful not to slice all the way through.
- Arrange and Add Pineapple: Place the kielbasa rounds cut-side up on the prepared baking sheet. Gently press a pineapple chunk into the top of each slice, tucking it into the slits where possible for even flavor distribution.
- Make the Sauce and Brush: In a small bowl, combine barbecue sauce, honey, Dijon mustard, and smoked paprika. Brush this sauce generously over the top of each kielbasa bite, coating them well to ensure caramelization.
