- 2 Tbsp brown sugar
- 1 tsp hot sauce
- Salt and pepper, to taste
Instructions
- Cook the bacon: Cut the bacon into bite-sized pieces and sauté in a medium skillet over medium heat until crispy. Remove from skillet and set aside.
- Prepare barbecue sauce mixture: In a bowl, combine the barbecue sauce, brown sugar, and hot sauce. Stir well to blend the flavors. Spread a thin layer of this mixture on the bottom of a baking dish.
- Prepare chicken breasts: Lightly pound the chicken breasts to an even thickness for uniform cooking. Season both sides generously with salt and pepper. Place the chicken breasts on top of the barbecue sauce layer in the baking dish.
- Add pineapple and bacon: Cut the pineapple into bite-sized pieces if not already done. Scatter the diced pineapple and the cooked bacon over and around the chicken in the baking dish.
- Top with barbecue sauce and bake: Pour the remaining barbecue sauce mixture evenly over the chicken, pineapple, and bacon. Bake uncovered in a preheated oven at 375°F (190°C) for 25-30 minutes, or until the chicken is cooked through and has reached an internal temperature of 165°F (74°C).
