  • 1 tablespoon granulated sugar
  • 3 cloves garlic, peeled and smashed
  • 1 teaspoon black peppercorns
  • 1 teaspoon yellow mustard seeds
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 4 fresh dill sprigs

Instructions

  1. Prepare Tomatoes: Prick each cherry tomato once with a toothpick to prevent splitting.
  2. Fill Jars: Pack tomatoes into two clean pint-sized jars, adding garlic cloves and dill sprigs to each.
  3. Make Brine: In a saucepan, combine vinegar, water, salt, sugar, peppercorns, mustard seeds, and red pepper flakes. Bring to a boil, stirring until salt and sugar dissolve.
  4. Pour Brine: Carefully pour hot brine over tomatoes, leaving 1/2 inch of headspace in the jars.
