Meatloaf Mixture
- 1 lb ground beef
- 1/2 lb ground pork (or use all beef)
- 1 cup shredded provolone or mozzarella cheese
- 1 cup breadcrumbs
- 2 large eggs
- 1/4 cup milk
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Sautéed Vegetables
- 1 tablespoon olive oil
- 1 green bell pepper, diced
- 1 small onion, diced
- 1 clove garlic, minced

Instructions
- Prepare and preheat: Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper to prevent sticking.
- Sauté vegetables: Heat olive oil in a skillet over medium heat. Add diced green bell pepper, onion, and minced garlic. Sauté for 4–5 minutes until softened and fragrant. Remove from heat and let cool slightly to avoid cooking the eggs when mixing.
- Combine meatloaf ingredients: In a large bowl, add ground beef, ground pork, sautéed vegetables, salt, black pepper, Worcestershire sauce, shredded provolone or mozzarella cheese, breadcrumbs, eggs, and milk. Mix gently until just combined, avoiding overmixing which can make the meatloaf dense.
- Shape and bake: Shape the mixture into a loaf form and place it in the prepared loaf pan or on the baking sheet. Bake in the preheated oven for 45–50 minutes, or until the internal temperature reaches 160°F (71°C).
- Add cheese topping (optional): In the last 5 minutes of baking, sprinkle additional shredded cheese on top of the meatloaf. Return it to the oven until the cheese is melted, bubbly, and slightly golden.
- Rest and serve: Remove the meatloaf from the oven and let it rest for 10 minutes. This allows juices to redistribute, making slicing easier and ensuring moist, flavorful servings. Slice and serve warm.
