Description

Pasta:

  • 12 ounces pasta (penne or rigatoni work well)

Sauce:

  • 3 cloves garlic, minced
  • 1 small shallot, finely chopped
  • 1/2 cup tomato paste
  • 1/2 cup heavy cream
  • 1/2 cup whole milk
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste

Garnish:

  • Chopped fresh basil for garnish

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook pasta according to package instructions. Drain and set aside.
  2. Make the Sauce: In a large skillet over medium heat, heat olive oil. Add the garlic and shallot, sauté until fragrant. Stir in the tomato paste, cook for 2 minutes. Lower heat, add cream and milk, whisk until smooth and pink. Simmer for 3–4 minutes, stir in Parmesan.
