For the Cookie Bars:

- 1 cup unsalted butter (softened)
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 2 large eggs

- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 cups quick oats
- 1½ cups semi-sweet chocolate chips
For the Frosting:
- 1 cup powdered sugar
- ½ cup creamy peanut butter
- ¼ cup milk
- ½ teaspoon vanilla extract
Instructions
- Preheat the Oven: Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Prepare the Cookie Bars: Cream together butter, peanut butter, granulated sugar, and brown sugar. Beat in eggs and vanilla. In a separate bowl, whisk flour, baking soda, and salt. Combine wet and dry ingredients, then stir in oats and chocolate chips. Spread dough in pan and bake for 22–25 minutes.
- Make the Frosting: Whisk together powdered sugar, peanut butter, milk, and vanilla. Spread over warm bars.
- Cool and Serve: Allow bars to cool completely before cutting into squares.
Notes
- For thicker bars, bake in a slightly smaller pan and extend baking time slightly.
