Ingredients
Scale
Asparagus
- 1 bunch asparagus, trimmed
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shaved parmesan
Tomatoes
- 1 pint cherry tomatoes, halved or quartered
- 2–3 garlic cloves, minced
- 1 teaspoon olive oil
- Salt and pepper to taste
Garnish
- 7 large basil leaves, sliced thin
- Balsamic reduction, store-bought or homemade
Instructions
- Preheat Oven: Preheat your oven to 425 degrees Fahrenheit and line a large baking sheet with parchment paper for easy cleanup.
- Prepare Tomatoes: In a bowl, combine the halved or quartered cherry tomatoes with minced garlic and 1 teaspoon of olive oil. Season with salt and pepper to taste, then set this mixture aside to marinate slightly while you prep the asparagus.
- Prep Asparagus: Snap off the tough ends of the asparagus and place the spears in a bowl. Toss them with 1 tablespoon olive oil, 1/4 teaspoon salt, and 1/4 teaspoon black pepper until well coated. Arrange the asparagus in a single layer on the prepared baking sheet.
- Add Toppings: Evenly sprinkle the shaved parmesan over the asparagus and then spoon the tomato and garlic mixture across the top.
- Roast: Place the baking sheet in the preheated oven and roast for 12-15 minutes, or until the asparagus is tender and the parmesan is lightly golden.
- Final Touches: Remove from the oven and immediately sprinkle the thinly sliced basil leaves over the tomatoes. Drizzle the dish with balsamic reduction. Serve hot and enjoy your vibrant and flavorful side dish.
Notes
- For a homemade balsamic reduction, simmer balsamic vinegar over medium heat until it thickens and reduces by half.
- You can substitute shaved parmesan with grated parmesan if preferred.
- If asparagus stalks are particularly thick, consider slicing them in half lengthwise for even roasting.
- Adjust salt and pepper according to taste.
- Leftovers can be refrigerated in an airtight container for up to 2 days and enjoyed cold or reheated.
