Beef Marinade
- 1 pound beef sirloin or flank steak, thinly sliced against the grain
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch

- 2 tablespoons vegetable oil, divided
- 1 large yellow onion, sliced
- 2 cloves garlic, minced
- 3 tablespoons oyster sauce
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- ¼ teaspoon black pepper
- 2 tablespoons water
- Sliced green onions (optional, for garnish)
Instructions
- Marinate the Beef: In a medium bowl, toss the thinly sliced beef with 2 tablespoons of soy sauce and 1 tablespoon of cornstarch. Let it marinate for 10–15 minutes while you prepare the other ingredients to enhance flavor and tenderize the meat.
- Sear the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the marinated beef in a single layer and sear without stirring for 1–2 minutes to develop a nice crust. Then stir-fry the beef for another 2 minutes until it’s just cooked through. Remove the beef from the skillet and set aside to prevent overcooking.
- Sauté Onions and Garlic: In the same skillet, add the remaining 1 tablespoon of oil. Sauté the sliced onions for 3–4 minutes until they soften and begin to brown slightly, bringing out their natural sweetness. Add the minced garlic and cook for an additional 30 seconds until fragrant.
- Combine and Sauce: Return the cooked beef to the skillet with the onions and garlic. Stir in 3 tablespoons of oyster sauce, 1 tablespoon of soy sauce, 1 teaspoon of sugar, ¼ teaspoon of black pepper, and 2 tablespoons of water. Toss everything together and stir-fry for another 1–2 minutes, allowing the sauce to thicken and coat the beef and onions evenly.
- Garnish and Serve: Remove from heat and garnish with sliced green onions if desired. Serve hot over steamed rice for a complete meal.
