Description

Oven Fried Potatoes and Onions is a simple and delicious side dish featuring crispy golden potatoes and caramelized onions baked to perfection. This easy-to-make recipe combines russet potatoes with aromatic spices and olive oil, making it a perfect complement to any breakfast, lunch, or dinner. It’s vegan, gluten-free, and packed with flavor.

Ingredients

Scale

Potatoes and Onions

  • 2 pounds russet potatoes, scrubbed and cut into 1/2-inch cubes
  • 1 large yellow onion, thinly sliced

Seasonings and Oil

  • 3 tablespoons olive oil or vegetable oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme (optional)
  • Salt and black pepper to taste

Garnish

  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. Prepare the Vegetables: In a large bowl, combine the cubed potatoes and thinly sliced onions. Drizzle with olive oil and sprinkle garlic powder, paprika, dried thyme (if using), salt, and black pepper. Toss everything together until the vegetables are evenly coated with the seasonings.
  3. Arrange on Baking Sheet: Spread the potato and onion mixture in a single even layer on the prepared baking sheet to ensure even cooking and crispiness.
  4. Bake and Flip: Bake in the preheated oven for 25 minutes. Then, flip the potatoes and stir the onions to promote uniform browning and crispiness.
  5. Continue Baking: Return the baking sheet to the oven and bake for an additional 20 to 25 minutes, or until the potatoes are golden brown and crispy and the onions are nicely caramelized.
  6. Serve: Remove from the oven. If desired, sprinkle with freshly chopped parsley for a burst of color and freshness. Serve hot as a flavorful side dish alongside your meal.

Notes

  • For extra crispiness, soak the potato cubes in cold water for 30 minutes before baking to remove excess starch. Pat them dry thoroughly before tossing with oil and seasonings.
  • Red or Yukon Gold potatoes can be used as alternatives and will also produce great results.
