Ground Beef Mixture:
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 bell peppers (any color), chopped
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1/2 cup tomato sauce
- 1 tablespoon tomato paste
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- Salt and pepper to taste
Additional Ingredients:
- 1 cup cooked white rice
- 1 cup shredded cheddar or mozzarella cheese
- Fresh parsley for garnish (optional)
Instructions
- Prepare Ground Beef Mixture: Heat olive oil in a large skillet. Cook onion until softened, add garlic, then brown ground beef. Drain excess fat if needed.
- Cook Peppers: Add bell peppers, diced tomatoes, tomato sauce, tomato paste, seasoning, paprika, salt, and pepper. Simmer covered for 10–12 minutes.
- Combine: Stir in cooked rice, heat through. Top with cheese, cover, and melt cheese for 2–3 minutes.
- Serve: Garnish with parsley, if desired, and enjoy!
Notes
- You can use ground turkey or plant-based meat instead of beef.
- Brown rice or cauliflower rice work as great substitutes.
- Add a pinch of red pepper flakes for extra heat.
