Ground Beef Mixture:

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 bell peppers (any color), chopped
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1/2 cup tomato sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Additional Ingredients:

  • 1 cup cooked white rice
  • 1 cup shredded cheddar or mozzarella cheese
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare Ground Beef Mixture: Heat olive oil in a large skillet. Cook onion until softened, add garlic, then brown ground beef. Drain excess fat if needed.
  2. Cook Peppers: Add bell peppers, diced tomatoes, tomato sauce, tomato paste, seasoning, paprika, salt, and pepper. Simmer covered for 10–12 minutes.
  3. Combine: Stir in cooked rice, heat through. Top with cheese, cover, and melt cheese for 2–3 minutes.
  4. Serve: Garnish with parsley, if desired, and enjoy!

Notes

  • You can use ground turkey or plant-based meat instead of beef.
  • Brown rice or cauliflower rice work as great substitutes.
