Ingredients
Scale
Vegetables & Herbs
- 4 cloves garlic (minced)
- 8 oz mushrooms (sliced)
- 3 cups baby spinach
- Chopped parsley for garnish
Liquids & Broth
- 2 cups vegetable or chicken broth
- 1 cup milk
- 1/4 cup heavy cream (optional for extra creaminess)
Pasta & Seasonings
- 8 oz fettuccine or linguine (uncooked)
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon Italian seasoning
Cheese
- 3/4 cup grated Parmesan cheese
Instructions
- Sauté Garlic and Mushrooms: In a large pot or deep skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sliced mushrooms, then sauté for 5 to 6 minutes until the mushrooms are browned and the garlic is fragrant.
- Add Liquids and Pasta: Pour in 2 cups of vegetable or chicken broth and 1 cup of milk. Add the uncooked fettuccine or linguine pasta, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/2 teaspoon Italian seasoning. Stir to combine.
- Simmer the Pasta: Bring the mixture to a boil, then reduce heat to a simmer. Cook uncovered for 10 to 12 minutes, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed.
- Wilt the Spinach: Stir in 3 cups of baby spinach and cook for 1 to 2 minutes until the spinach is wilted and incorporated into the sauce.
- Finish with Cheese and Cream: Add 3/4 cup grated Parmesan cheese and 1/4 cup heavy cream if using. Stir well until the sauce is creamy and everything is well combined.
- To Serve: Remove from heat, garnish with chopped parsley, and serve immediately.
