Description

One Pot Garlic Parmesan Pasta with Spinach and Mushrooms is a creamy, comforting, and easy-to-make dish ready in just 30 minutes. This meatless meal features tender pasta cooked directly in a flavorful garlicky, cheesy sauce with sautéed mushrooms and fresh spinach, all combined in a single pot for minimal prep and cleanup—ideal for busy weeknights.

Ingredients

Scale

Vegetables & Herbs

  • 4 cloves garlic (minced)
  • 8 oz mushrooms (sliced)
  • 3 cups baby spinach
  • Chopped parsley for garnish

Liquids & Broth

  • 2 cups vegetable or chicken broth
  • 1 cup milk
  • 1/4 cup heavy cream (optional for extra creaminess)

Pasta & Seasonings

  • 8 oz fettuccine or linguine (uncooked)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning

Cheese

  • 3/4 cup grated Parmesan cheese

Instructions

  1. Sauté Garlic and Mushrooms: In a large pot or deep skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sliced mushrooms, then sauté for 5 to 6 minutes until the mushrooms are browned and the garlic is fragrant.
  2. Add Liquids and Pasta: Pour in 2 cups of vegetable or chicken broth and 1 cup of milk. Add the uncooked fettuccine or linguine pasta, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/2 teaspoon Italian seasoning. Stir to combine.
  3. Simmer the Pasta: Bring the mixture to a boil, then reduce heat to a simmer. Cook uncovered for 10 to 12 minutes, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed.
  4. Wilt the Spinach: Stir in 3 cups of baby spinach and cook for 1 to 2 minutes until the spinach is wilted and incorporated into the sauce.
  5. Finish with Cheese and Cream: Add 3/4 cup grated Parmesan cheese and 1/4 cup heavy cream if using. Stir well until the sauce is creamy and everything is well combined.
  6. To Serve: Remove from heat, garnish with chopped parsley, and serve immediately.

Notes

  • You can substitute kale for spinach or add grilled chicken to increase protein content.
