- 4 boneless, skinless chicken breasts

For the Sauce:
- 3 cloves garlic, minced
- 1 pint cherry tomatoes, halved
- 1 small red onion, thinly sliced
- 1/2 cup balsamic vinegar
- 2 tablespoons honey
- 1 tablespoon fresh basil, chopped
- 1 tablespoon fresh parsley, chopped
Instructions
- Season the Chicken: Season chicken breasts with salt, pepper, and Italian seasoning.
- Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for 3–4 minutes per side until golden brown. Remove chicken from the skillet and set aside.
- Prepare the Sauce: Reduce heat to medium, then add garlic, cherry tomatoes, and red onion. Cook for 2–3 minutes until tomatoes begin to soften. Stir in balsamic vinegar and honey, scraping up any browned bits from the bottom of the pan.
- Finish Cooking: Return chicken to the skillet, spooning sauce over the top. Cover and simmer for 10–12 minutes, or until chicken reaches an internal temperature of 165°F. Sprinkle with fresh basil and parsley before serving.
