Description

These No-Bake Pecan Coconut Praline Cookies are a quick and delicious treat combining the rich flavors of pecans and coconut in a sweet, chewy praline exterior. Perfect for an easy dessert or Southern-inspired snack, these cookies set without baking and deliver a satisfying crunch and sweetness in every bite.

Ingredients

Scale

Base Ingredients

  • 1 ½ cups granulated sugar
  • ¾ cup brown sugar (packed)
  • ½ cup whole milk
  • ½ cup unsalted butter

Flavorings & Mix-ins

  • 1 teaspoon vanilla extract
  • 2 cups chopped pecans
  • 2 cups sweetened shredded coconut

Instructions

  1. Combine Ingredients: In a medium saucepan over medium heat, combine the granulated sugar, brown sugar, milk, and butter. Stir constantly to ensure the mixture heats evenly and sugars dissolve completely.
  2. Boil Mixture: Bring the mixture to a full rolling boil. Once boiling, continue stirring and maintain the boil for 3 full minutes to allow the sugars to caramelize slightly and thicken the syrup, which will help the cookies set properly.
  3. Remove from Heat & Add Mix-ins: Remove the saucepan from heat and stir in the vanilla extract, chopped pecans, and shredded coconut thoroughly until everything is well combined and evenly coated with the sugary mixture.
  4. Form Cookies: Using a spoon or cookie scoop, drop heaping spoonfuls of the mixture onto a parchment-lined baking sheet. Space them enough so they don’t stick together as they set.
  5. Let Set: Allow the cookies to sit at room temperature for at least 30 to 45 minutes until they are fully set and firm enough to handle. Once set, they can be served or stored.

Notes

  • For a chewier texture, substitute sweetened coconut with unsweetened shredded coconut.
  • Lightly toasting the chopped pecans before mixing will enhance the flavor and add a subtle crunch.
  • These cookies store well in an airtight container at room temperature for up to 5 days, making them great for prepare-ahead treats.
