  • 1 1/2 cups crushed chocolate cookies (like Oreos, filling removed)
  • 1/3 cup melted unsalted butter

For the mint layer:

  • 2 cups powdered sugar
  • 2 tablespoons unsalted butter, softened
  • 2 tablespoons milk
  • 1 teaspoon peppermint extract
  • Green food coloring (optional)

For the topping:

  • 1 1/4 cups dark or semi-sweet chocolate chips
  • 2 tablespoons unsalted butter

Instructions

  1. Prepare the base: Line an 8×8-inch square baking pan with parchment paper, leaving an overhang on the sides. In a medium bowl, mix the crushed chocolate cookies with melted butter until fully combined. Press the mixture firmly into the bottom of the prepared pan to form the base. Place in the refrigerator to chill while preparing the mint layer.
  2. Make the mint layer: In a large bowl, mix together powdered sugar, softened butter, milk, and peppermint extract until smooth and spreadable. Add a drop or two of green food coloring if desired and mix well. Spread the mint layer evenly over the chilled base and return the pan to the refrigerator.
  3. Prepare the chocolate topping: In a microwave-safe bowl, melt the chocolate chips and butter together in 30-second intervals, stirring between each, until smooth. Pour over the mint layer and spread evenly.
  4. Chill the slice: Chill in the refrigerator for at least 2 hours, or until fully set. Once set, lift the slice out using the parchment overhang and cut into squares or bars using a warm knife.
