Indulge in these delicious and easy-to-make No-Bake Chocolate Oatmeal Cookie Bars that are perfect for satisfying your sweet cravings. A delightful combination of oats, peanut butter, honey, and chocolate, these bars are a crowd-pleaser.

Ingredients

Scale

For the Oat Layer:

  • 2 1/2 cups old-fashioned rolled oats
  • 1 cup creamy peanut butter
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

For the Chocolate Layer:

  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil (for chocolate layer)

Instructions

  1. Prepare the Oat Layer: Line an 8×8-inch baking dish with parchment paper. In a saucepan over low heat, melt peanut butter, honey, 1/4 cup coconut oil, and salt. Remove from heat, stir in vanilla, then add oats. Press mixture into the dish.
  2. Make the Chocolate Layer: Melt chocolate chips with 1 tbsp coconut oil, then pour over the oat layer.
  3. Chill and Serve: Refrigerate for 2 hours, then slice into bars.

Notes

  • Quick oats can be used for a softer texture.
  • Almond butter or sunflower seed butter can be substituted.
  • Store bars in the fridge for a firmer texture or at room temperature for a softer bite.
