Instructions
- Prepare the Oat Layer: Line an 8×8-inch baking dish with parchment paper. In a saucepan over low heat, melt peanut butter, honey, 1/4 cup coconut oil, and salt. Remove from heat, stir in vanilla, then add oats. Press mixture into the dish.
- Make the Chocolate Layer: Melt chocolate chips with 1 tbsp coconut oil, then pour over the oat layer.
- Chill and Serve: Refrigerate for 2 hours, then slice into bars.
