Description

A rich and savory Mushroom Onion Gouda Grilled Cheese sandwich featuring caramelized onions, sautéed mushrooms, and creamy Gouda cheese melted between buttery sourdough bread slices. Perfectly golden and crispy with a luscious filling, this recipe offers an elevated twist on the classic grilled cheese.

Ingredients

Scale

Bread and Cheese

  • 8 slices of sourdough bread
  • 8 slices Gouda cheese

Vegetables

  • 1 lb mushrooms, sliced
  • 2 large onions, thinly sliced

Other Ingredients

  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Caramelize the onions: In a skillet, heat olive oil over medium heat. Add the thinly sliced onions with a pinch of salt. Cook the onions slowly, stirring occasionally, until they turn a deep golden brown and become sweet and tender, about 15-20 minutes.
  2. Sauté the mushrooms: Add the sliced mushrooms to the skillet with the caramelized onions. Season with salt and pepper. Cook over medium heat until the mushrooms are golden brown and all their liquid has evaporated, approximately 10 minutes. Stir occasionally to ensure even cooking.
  3. Prepare the bread: Spread butter on one side of each slice of sourdough bread. This will help achieve a crispy, golden crust when cooked.
  4. Assemble the sandwich: Place one buttered slice of bread, butter-side down, on a clean skillet heated over medium heat. Layer a slice of Gouda cheese, then a generous amount of the mushroom and onion mixture, followed by another slice of Gouda cheese on top. Finish by placing a second slice of bread, butter-side up, to close the sandwich.
  5. Grill the sandwich: Cook the sandwich until the bottom bread slice is golden brown and the cheese begins to melt, about 3-4 minutes. Carefully flip the sandwich and cook the other side until it is golden brown and the cheese inside is fully melted, about another 3-4 minutes.
  6. Repeat and serve: Repeat the grilling process with the remaining sandwiches. Serve warm and enjoy the gooey, flavorful Mushroom Onion Gouda Grilled Cheese.

Notes

  • Use medium heat to prevent burning the bread while allowing cheese to melt properly.
  • For extra flavor, deglaze the mushroom and onion mixture with a splash of white wine or balsamic vinegar during cooking.
  • Gouda cheese melts beautifully but can be substituted with other melting cheeses like Swiss or Gruyère if preferred.
  • Serve with a side of tomato soup or a fresh salad for a complete meal.
