Ingredients
Scale
Meatloaf Mixture
- 1 lb (450g) ground beef
- 1/2 lb (225g) ground pork (optional)
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup milk
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme or parsley
Mushrooms and Topping
- 1 tablespoon olive oil
- 1 cup mushrooms, sliced
- 1 tablespoon butter
- 1 tablespoon Worcestershire sauce (for the mushrooms)
- 4–6 slices Swiss cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet or loaf pan with parchment paper or lightly grease it to prevent sticking.
- Prepare the Meatloaf Mixture: In a large mixing bowl, combine ground beef, ground pork (if using), breadcrumbs, egg, milk, chopped onion, minced garlic, Worcestershire sauce, salt, pepper, and dried thyme or parsley. Mix gently ensuring all ingredients are evenly incorporated without overmixing to keep the meatloaf tender.
- Shape and Bake: Form the meat mixture into a loaf shape and place it on the prepared baking sheet or into the loaf pan. Bake in the oven for 45-50 minutes until the internal temperature of the meatloaf reaches 160°F (71°C), indicating it is fully cooked.
- Sauté the Mushrooms: While the meatloaf is baking, heat olive oil in a pan over medium heat. Add sliced mushrooms and sauté for 5-6 minutes until they turn golden brown. Stir in butter and Worcestershire sauce and cook for another 2 minutes, then remove from heat and set aside.
- Add Swiss Cheese and Mushrooms: Once the meatloaf has finished baking, remove it from the oven and layer slices of Swiss cheese evenly over the top. Spoon the sautéed mushrooms over the cheese, then return the meatloaf to the oven for an additional 5-7 minutes until the cheese melts and becomes bubbly.
- Garnish and Serve: Remove the meatloaf from the oven and let it rest for a few minutes to allow the juices to redistribute. Garnish with freshly chopped parsley and serve warm for a satisfying meal.
Notes
- Ground pork can be omitted to keep the meatloaf beef-only or substituted with ground turkey for a leaner option.
- Ensure not to overmix the meat mixture to maintain a tender texture.
- Use a meat thermometer to check for doneness to avoid undercooking or dryness.
- Leftover meatloaf can be refrigerated for up to 3 days or frozen for longer storage.
- Swiss cheese can be swapped for mozzarella or cheddar for a different flavor profile.
