Cookie Dough:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- ½ cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ teaspoon peppermint extract
- 2¼ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
Additional:
- 1 cup semisweet chocolate chips
- 1 cup mint chocolate chips or chopped Andes mints
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a 9×13-inch baking pan with parchment paper.
- Mix the dough: Cream together butter and sugars, add eggs and extracts, then mix in dry ingredients. Fold in chocolate chips.
- Bake: Spread dough in the pan and bake for 25–28 minutes until set. Cool before slicing.
Notes
- For a stronger mint flavor, adjust peppermint extract carefully.
