Main Salad:

  • 2 cups elbow macaroni, cooked and cooled

  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, diced
  • 1/2 cup shredded cheddar or cotija cheese (optional)
  • juice of 1 lime
  • salt and black pepper, to taste

For the Dressing:

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or Greek yogurt
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • pinch of cayenne pepper (optional)

Instructions

  1. Main Salad: In a large mixing bowl, combine the cooked and cooled macaroni, corn, black beans, red bell pepper, red onion, cherry tomatoes, cilantro, avocado, and cheese if using.
  2. For the Dressing: In a separate bowl, whisk together the mayonnaise, sour cream or Greek yogurt, lime juice, chili powder, cumin, garlic powder, and cayenne if using.
  3. Pour the dressing over the pasta mixture and toss until evenly coated. Season with salt and pepper to taste.
  4. Cover and chill for at least 30 minutes before serving to let the flavors meld. Garnish with extra cilantro or a squeeze of fresh lime if desired.

Notes
