Sauce:

  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • ½ cup dry white wine (optional, can substitute with more broth)
  • juice and zest of 1 large lemon

Additions:

  • 1 can (14 ounces) artichoke hearts, drained and halved
  • ½ cup pitted Kalamata olives
  • 2 tablespoons capers, drained
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season the chicken: Season chicken thighs with salt, pepper, and oregano.
  2. Sear the chicken: Heat olive oil in a large skillet over medium-high heat. Sear chicken on both sides until golden brown, about 3–4 minutes per side. Transfer chicken to a plate.
  3. Prepare the sauce: Reduce heat to medium and add garlic to the skillet, cooking for 30 seconds until fragrant. Pour in chicken broth, white wine (if using), lemon juice, and lemon zest, scraping up any browned bits from the bottom.
  4. Simmer: Return chicken to the skillet and add artichoke hearts, olives, and capers. Reduce heat to low, cover, and simmer for 15–20 minutes, until chicken is cooked through.
  5. Finish and serve: Sprinkle with fresh parsley before serving.
