Chicken Marinade

  • 1 (15.5 oz) can chickpeas, drained and rinsed
  • 1 large cucumber, chopped
  • 1 cup quartered grape tomatoes
  • 1/4 cup sliced red onion
  • 1/2 cup crumbled feta cheese
  • 1/4 cup tzatziki sauce
  • 1/4 cup hummus

Instructions

  1. Marinate the chicken: Place the chicken breasts in a bowl and pour the Greek dressing over them. Ensure both sides of the chicken are well coated. Cover and refrigerate for at least 1 hour to allow the flavors to infuse and tenderize the meat.
  2. Prepare the rice: Cook the Success Boil-in-Bag White Rice according to the package instructions. If using pre-cooked rice, simply measure out 2 heaping cups. Set aside until ready to assemble the bowls.

Place the marinated chicken breasts in the air fryer basket and cook for 12-15 minutes, flipping halfway, until fully cooked and juices run clear. Alternatively, you can bake the chicken in a preheated oven at 400°F for about 20 minutes. Let the chicken rest a few minutes before slicing.
  4. Assemble the bowls: Divide the cooked rice evenly among four bowls. Top each portion with sliced or whole chicken breasts, chickpeas, chopped cucumber, quartered grape tomatoes, sliced red onion, a spoonful of hummus, a dollop of tzatziki, and sprinkle with crumbled feta cheese.
