  • 1 zucchini, sliced into thick rounds

Instructions

  1. Prepare the Marinade: In a large bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, thyme, paprika, salt, and black pepper until well combined.
  2. Marinate the Beef: Add the sirloin steak cubes to the marinade and toss to coat evenly. Cover the bowl and refrigerate for at least 30 minutes, or up to 8 hours for deeper flavor.
  3. Preheat the Grill: Heat your grill or grill pan to medium-high heat to ensure a hot surface for searing the kabobs.
  4. Assemble the Kabobs: Thread the marinated beef cubes alternately with red bell pepper, green bell pepper, red onion chunks, and zucchini rounds onto skewers.
  5. Grill the Kabobs: Place the skewers on the grill and cook for 8 to 10 minutes, turning occasionally so all sides develop nice char marks. Cook until the beef reaches your desired doneness and vegetables are tender but still slightly crisp.
