- 2 cups baby spinach, roughly chopped

Instructions
- Heat the olive oil: In a large pot over medium heat, cook the Italian sausage until browned.
- Add onion and spices: Sauté diced onion until softened. Add garlic, oregano, basil, red pepper flakes, salt, and pepper.
- Simmer with orzo: Stir in sun-dried tomatoes and chicken broth. Bring to a boil, then add orzo and simmer until tender.
- Finish the soup: Reduce heat, stir in cream and Parmesan. Add spinach and let wilt. Adjust seasonings and serve hot, garnished with basil.
