Tender, juicy chicken breasts are stuffed with creamy brie and crisp apple slices, then glazed with a sweet and tangy maple mustard sauce. Searing the chicken creates a flavorful crust before baking it to juicy perfection. Garnished with fresh herbs, this dish pairs wonderfully with roasted vegetables or mashed sweet potatoes for a comforting yet sophisticated meal.
Ingredients
Chicken and Stuffing
- 4 boneless, skinless chicken breasts
- 4 ounces brie cheese, sliced
- 1 small apple (like Honeycrisp or Gala), thinly sliced
Glaze and Seasoning
- 1 tablespoon olive oil
- Salt and black pepper to taste
- 2 tablespoons Dijon mustard
- 2 tablespoons maple syrup
- 1 teaspoon whole grain mustard
- 1/2 teaspoon garlic powder
Garnish
- Fresh thyme or parsley (optional)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the chicken.
- Prepare Chicken Pockets: Carefully slice a pocket into the side of each chicken breast, making sure not to cut all the way through. Season both sides of the chicken breasts with salt and black pepper to taste.
- Stuff Chicken: Stuff each chicken breast pocket with several slices of brie cheese and thin apple slices, distributing them evenly inside.
- Make Glaze: In a small bowl, whisk together the Dijon mustard, maple syrup, whole grain mustard, and garlic powder until smooth and combined.
- Sear Chicken: Heat 1 tablespoon of olive oil in an oven-safe skillet over medium heat. Once hot, sear the stuffed chicken breasts for 2–3 minutes on each side, until they develop a golden-brown crust.
- Glaze and Bake: Brush the prepared mustard-maple glaze generously over the seared chicken breasts. Transfer the skillet to the preheated oven and bake for 20–25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Rest and Serve: Remove the skillet from the oven and let the chicken rest for a few minutes to retain juices. Garnish with fresh thyme or parsley if desired before serving.
Notes
- For an extra burst of flavor, add chopped fresh rosemary or thyme to the glaze.
- This dish pairs beautifully with roasted vegetables or creamy mashed sweet potatoes.
- Brie cheese can be substituted with goat cheese or Camembert for different flavor variations.
