Potatoes:
- 2 pounds russet potatoes (peeled and cut into 1-inch cubes)
Chicken:
- 1 1/2 pounds boneless skinless chicken breasts (cut into bite-sized pieces)
Other:
- 1/3 cup olive oil
- 1 packet (1 ounce) ranch seasoning mix
- 2 cups shredded cheddar cheese
- 6 slices bacon (cooked and crumbled)
- 1/2 cup chopped green onions
- Salt and pepper to taste
- Sour cream for serving (optional)
Instructions
- Preheat Oven: Preheat the oven to 400°F (204°C) and grease a 9×13-inch baking dish.
- Prepare Potatoes: Toss cubed potatoes with olive oil, ranch seasoning, salt, and pepper. Spread in the baking dish and bake for 25-30 minutes.
- Prepare Chicken: Season chicken with salt and pepper. Remove the dish from the oven and layer raw chicken over the potatoes. Top with half of the cheese and bacon.
- Final Bake: Bake for an additional 20-25 minutes until chicken is cooked and potatoes are tender. Top with remaining cheese, bacon, and green onions. Bake for 5 more minutes until cheese melts.
