Chicken:

  • 1 1/2 pounds boneless skinless chicken breasts (cut into bite-sized pieces)

Other:

  • 1/3 cup olive oil
  • 1 packet (1 ounce) ranch seasoning mix
  • 2 cups shredded cheddar cheese
  • 6 slices bacon (cooked and crumbled)
  • 1/2 cup chopped green onions
  • Salt and pepper to taste
  • Sour cream for serving (optional)

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (204°C) and grease a 9×13-inch baking dish.
  2. Prepare Potatoes: Toss cubed potatoes with olive oil, ranch seasoning, salt, and pepper. Spread in the baking dish and bake for 25-30 minutes.
