Instructions
- Preheat and Prepare Baking Dish. Preheat your oven to 375°F (190°C). Lightly coat a 9×13-inch baking dish with nonstick cooking spray to prevent sticking.
- Mix Ingredients. In a large mixing bowl, combine the thawed shredded hash browns, nonfat Greek yogurt, light sour cream, shredded reduced-fat cheddar cheese, chopped yellow onion, grated Parmesan cheese, garlic powder, onion powder, salt, and black pepper. Stir thoroughly until the mixture is evenly blended.
- Assemble the Casserole. Pour the potato mixture into the prepared baking dish and spread it out evenly to ensure uniform cooking.
- Add Butter. Drizzle the melted light butter or margarine evenly over the top of the casserole to add flavor and promote a golden crust.
