Description

A delightful Lemon Pretzel Dessert featuring a crunchy pretzel crust, creamy lemon pudding layer, and fluffy whipped topping. This layered treat combines sweet and salty flavors perfect for summer gatherings and easy to prepare in advance.

Ingredients

Scale

Crust

  • 2 cups crushed pretzels
  • 3/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar

Filling

  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 (8 oz) container whipped topping (like Cool Whip), thawed, divided
  • 1 (3.4 oz) box instant lemon pudding mix
  • 1 cup cold milk
  • 1 tablespoon lemon zest (optional, for extra flavor)

Instructions

  1. Prepare and bake the crust: Preheat your oven to 350°F (175°C). In a medium bowl, mix the crushed pretzels, melted butter, and granulated sugar until well combined. Press this mixture firmly into the bottom of a 9×13-inch baking dish to form an even crust. Bake for 10 minutes, then remove from oven and allow to cool completely to keep crust crisp.
  2. Make cream cheese layer: In a large bowl, beat the softened cream cheese together with powdered sugar until smooth and creamy. Fold in half of the whipped topping until the mixture is light and fluffy. Spread this cream cheese mixture evenly over the cooled pretzel crust, making sure to seal the edges well to prevent pudding from leaking through.
  3. Prepare lemon pudding layer: In a separate bowl, whisk the instant lemon pudding mix with cold milk for about 2 minutes, or until the pudding thickens. Stir in the lemon zest if using for additional flavor. Spread this pudding mixture evenly over the cream cheese layer in the baking dish.
  4. Add the final topping and chill: Top the pudding layer with the remaining whipped topping, smoothing it out for an even surface. Cover the dessert and refrigerate for at least 4 hours to allow it to set and flavors to meld before slicing and serving.

Notes

  • Ensure the pretzel crust is completely cooled before adding the cream cheese layer to keep it crisp.
  • For garnish, sprinkle extra lemon zest or pretzel crumbs on top for a decorative and flavorful touch.
  • Store the dessert covered in the refrigerator for up to 3 days to maintain freshness.
