Description

This Lemon Pepper Salmon recipe is a delightful and healthy option for a flavorful dinner. The salmon fillets are seasoned with zesty lemon pepper, baked to perfection, and served with optional Garlic Parmesan Asparagus for a well-rounded meal.

Ingredients

Scale

For Lemon Pepper Salmon:

  • 4 salmon fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 ½ teaspoons lemon pepper seasoning
  • Salt to taste
  • Lemon slices for garnish

For Optional Garlic Parmesan Asparagus:

  • 1 bunch asparagus (trimmed)
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • 2 tablespoons grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
  2. Prepare Lemon Pepper Salmon: In a small bowl, mix olive oil, lemon juice, lemon zest, and lemon pepper seasoning. Place salmon fillets on the prepared sheet, skin-side down, and brush with the lemon pepper mixture. Season with salt, garnish with lemon slices, and bake for 12–15 minutes.
  3. Make Optional Garlic Parmesan Asparagus: Toss trimmed asparagus with olive oil, garlic, salt, and pepper. Roast in the oven for 10–12 minutes. Sprinkle with Parmesan cheese before serving.

Notes

  • This salmon goes well with rice, quinoa, or a fresh salad.
  • Asparagus can be grilled instead of roasted.
