These Lemon Coriander Tofu Skewers are perfect for a light, refreshing plant-based main dish. Marinated in a zesty blend of fresh lemon juice, garlic, and aromatic spices, the extra-firm tofu is grilled to golden perfection alongside vibrant red bell peppers and zucchini. Tofu and Marinade

  • 14 oz (400g) extra-firm tofu, pressed and cubed
  • 2 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons chopped fresh coriander (cilantro)
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon chili flakes (optional)
  • Salt and black pepper, to taste

Vegetables and Assembly

  • 1 red bell pepper, cut into chunks
  • 1 zucchini, sliced
  • Wooden or metal skewers (if wooden, soaked in water beforehand)

Instructions

  1. Prepare the Marinade: In a mixing bowl, whisk together olive oil, fresh lemon juice, lemon zest, chopped coriander, minced garlic, ground cumin, ground coriander, chili flakes, salt, and black pepper until well combined.
  2. Marinate the Tofu: Add the cubed tofu to the marinade and gently toss to coat each piece evenly. Cover the bowl and refrigerate for at least 30 minutes, preferably 1 hour, to allow the flavors to infuse.
  3. Prepare Skewers: While the tofu marinates, if you are using wooden skewers, soak them in water for about 20 minutes to prevent burning. Thread the marinated tofu cubes alternately with red bell pepper chunks and zucchini slices onto the skewers.
  4. Preheat the Grill: Preheat your grill, grill pan, or oven broiler to medium-high heat ensuring it’s hot enough for cooking.
  5. Grill the Skewers: Place the assembled skewers on the preheated grill and cook for 10 to 12 minutes, turning occasionally to get an even golden crisp on all sides. The tofu should develop slight char marks and become slightly crisp while the vegetables soften but remain firm.
  6. Serve: Serve the grilled tofu skewers warm alongside your choice of rice, fresh salad, or a flavorful dipping sauce such as a yogurt-herb dip or lemon tahini sauce for added richness.
