Lasagna Noodles and Sauce

  • 810 lasagna noodles
  • 2 cups marinara or pasta sauce
  • 1 tablespoon olive oil

Cheese Filling

  • 1 cup ricotta cheese
  • 1 egg
  • 1 cup shredded mozzarella cheese (plus extra for topping)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 2 cloves garlic, minced
  • Salt and black pepper to taste

Optional Garnish

  • Chopped fresh basil or parsley

Instructions

  1. Preheat and prepare dish: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Cook noodles: Boil the lasagna noodles according to the package instructions until al dente. Drain and lay them flat on parchment paper or a clean towel to cool slightly and prevent sticking.
  3. Make cheese filling: In a mixing bowl, combine ricotta cheese, egg, 1 cup shredded mozzarella cheese, grated Parmesan, Italian seasoning, minced garlic, salt, and black pepper. Mix well until everything is fully incorporated.
  4. Assemble roll-ups: Spread about 1/4 cup of the cheese mixture evenly onto each noodle. Carefully roll each noodle from one end to the other to form individual roll-ups.
  5. Prepare baking dish: Spread 1 cup of marinara sauce on the bottom of the greased baking dish. Place the roll-ups seam-side down in the dish, arranging them evenly.
  6. Add sauce and cheese topping: Spoon the remaining marinara sauce over the roll-ups and sprinkle extra shredded mozzarella cheese on top for a bubbly, golden finish.
  7. Bake: Cover the dish with foil and bake for 20 minutes. Then uncover and bake for an additional 10 to 15 minutes until the cheese on top is melted and bubbly.
  8. Garnish and serve: Remove from the oven and garnish with chopped fresh parsley or basil before serving for a burst of fresh flavor and color.
