Ingredients
Scale
Lasagna Noodles and Sauce
- 8–10 lasagna noodles
- 2 cups marinara or pasta sauce
- 1 tablespoon olive oil
Cheese Filling
- 1 cup ricotta cheese
- 1 egg
- 1 cup shredded mozzarella cheese (plus extra for topping)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 2 cloves garlic, minced
- Salt and black pepper to taste
Optional Garnish
- Chopped fresh basil or parsley
Instructions
- Preheat and prepare dish: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
- Cook noodles: Boil the lasagna noodles according to the package instructions until al dente. Drain and lay them flat on parchment paper or a clean towel to cool slightly and prevent sticking.
- Make cheese filling: In a mixing bowl, combine ricotta cheese, egg, 1 cup shredded mozzarella cheese, grated Parmesan, Italian seasoning, minced garlic, salt, and black pepper. Mix well until everything is fully incorporated.
- Assemble roll-ups: Spread about 1/4 cup of the cheese mixture evenly onto each noodle. Carefully roll each noodle from one end to the other to form individual roll-ups.
- Prepare baking dish: Spread 1 cup of marinara sauce on the bottom of the greased baking dish. Place the roll-ups seam-side down in the dish, arranging them evenly.
- Add sauce and cheese topping: Spoon the remaining marinara sauce over the roll-ups and sprinkle extra shredded mozzarella cheese on top for a bubbly, golden finish.
- Bake: Cover the dish with foil and bake for 20 minutes. Then uncover and bake for an additional 10 to 15 minutes until the cheese on top is melted and bubbly.
- Garnish and serve: Remove from the oven and garnish with chopped fresh parsley or basil before serving for a burst of fresh flavor and color.
Notes
- You can add cooked ground beef or spinach to the cheese filling for extra flavor and nutrition.
- These roll-ups are excellent for meal prep and freeze well either before or after baking.
- Be sure not to overcook the noodles to prevent them from breaking when rolling.
- Use fresh herbs for garnish to enhance presentation and taste.
