Instructions
- Brown the Kielbasa: Heat the olive oil in a large skillet over medium-high heat. Add the sliced kielbasa and cook until browned, about 4–5 minutes. Remove the kielbasa from the skillet and set it aside to keep warm.
- Cook the Potatoes: In the same skillet, add the halved or quartered baby potatoes along with salt, black pepper, and smoked paprika. Cook the potatoes for 8–10 minutes, stirring occasionally, until they are browned and mostly tender.
- Sauté Onion and Garlic: Add the sliced onion and minced garlic to the skillet with the potatoes. Sauté for 2–3 minutes until fragrant and the onions begin to soften.
- Cook the Cabbage: Stir in the thinly sliced cabbage and pour in the chicken broth or water. Cover the skillet and cook for 5–7 minutes, or until the cabbage has wilted and the potatoes are fully tender.
- Combine Everything: Return the browned kielbasa to the skillet. Add the apple cider vinegar and toss all ingredients together. Cook uncovered for another 2 minutes to allow flavors to meld.
- Garnish and Serve: Garnish with chopped parsley if desired, and serve the skillet warm for a comforting and delicious meal.
