  • 2 cloves garlic (minced)
  • 4 cups chicken broth
  • 1 1/2 cups cooked shredded chicken (rotisserie works well)
  • 1 (10-ounce) can green enchilada sauce
  • 1 (4-ounce) can diced green chiles
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces cream cheese (cubed)
  • 1/2 cup heavy cream
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro (optional)
  • lime wedges (for serving, optional)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion and sauté for 3 to 4 minutes until softened.
  2. Stir in garlic and cook for another 30 seconds until fragrant.
  3. Pour in the chicken broth, enchilada sauce, green chiles, cumin, chili powder, salt, and black pepper. Bring to a simmer.
  4. Add the shredded chicken and cream cheese. Stir until the cream cheese melts completely.
  5. Reduce heat to low and add the heavy cream and shredded cheese, stirring until smooth and fully incorporated.
  6. Simmer for an additional 5 to 10 minutes until thickened and heated through.
  7. Serve hot, garnished with chopped cilantro and a squeeze of lime if desired.

Notes

  • For extra spice, add jalapeños or use hot enchilada sauce.
