Description

These Keto Chicken Cheese Taquitos are a delicious low-carb twist on traditional Mexican taquitos. Made with a cheesy outer shell and a flavorful chicken filling, they are perfect for a satisfying meal or snack.

  • 2 cups cooked chicken breast (shredded)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • Salt and black pepper to taste
  • 1 tablespoon chopped fresh cilantro (optional)

For Serving:

  • Sour cream
  • Salsa
  • Guacamole

Instructions

  1. Preheat the Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Mix Chicken and Spices: In a bowl, mix together the shredded chicken, garlic powder, onion powder, cumin, chili powder, salt, pepper, and cilantro if using.
  3. Prepare Cheese Circles: On the prepared baking sheet, make six piles of cheese—about 1/3 cup each—spaced a few inches apart. Flatten each pile slightly to form thin circles.
  4. Bake Cheese: Bake for 6–8 minutes, or until the cheese is melted and edges are golden. Remove from oven and let cool for about 1 minute.
  5. Fill and Roll: Place a small amount of the chicken filling on one end of each cheese circle and gently roll into a taquito shape. Hold for a few seconds until sealed.
  6. Final Bake: Return to oven for another 2–3 minutes to heat through, if desired.
  7. Serve: Serve warm with sour cream, salsa, or guacamole.

  • Use rotisserie chicken for convenience.
  • You can swap cheddar and mozzarella for pepper jack or Monterey Jack for a spicier version.
