Instructions

  4. Fold in Flour and Milk: Gently fold the plain flour into the mixture, then gradually add the whole milk, stirring carefully until the batter is smooth and combined.
  5. Whisk Egg Whites: In a separate clean bowl, whisk the egg whites with a pinch of salt until stiff peaks form, creating a light and airy texture.
  6. Combine Mixtures: Carefully fold the stiff egg whites into the lemon batter, being gentle to avoid deflating the egg whites, to keep the pudding light and fluffy.
  7. Prepare Water Bath: Pour the batter into the greased baking dish. Place the dish into a larger roasting pan and fill the roasting pan halfway with hot water to create a water bath, which ensures gentle, even cooking.
  8. Bake: Transfer the roasting pan to the oven and bake for 35–40 minutes until the pudding top is lightly golden and set, while the bottom remains soft and saucy.
