- 3 large eggs
- ½ cup sour cream
- ¼ cup fresh lime juice
- 1 tablespoon lime zest

- 1 teaspoon vanilla extract

Instructions
- Preheat the Oven: Preheat the oven to 325°F (163°C).
- Prepare the Crust: Mix graham cracker crumbs, ¼ cup sugar, and melted butter. Press into a 9-inch springform pan and bake for 10 minutes. Let cool.
- Make the Filling: Beat cream cheese until smooth. Add ¾ cup sugar, eggs, sour cream, lime juice, lime zest, jalapeños, vanilla, and salt. Pour over crust.
- Bake: Place the pan in a larger pan with hot water for a water bath. Bake for 50–60 minutes. Let cool in the oven.
- Chill and Garnish: Chill the cheesecake for at least 4 hours. Garnish with whipped cream and lime slices before serving.
