Description

Additional:

  • 1 1/4 pounds bittersweet chocolate disks or fèves (at least 60% cacao)
  • 1/2 cup semisweet or milk chocolate (melted for dipping)
  • flaky sea salt for sprinkling (optional)

Instructions

  1. Dry Ingredients: In a medium bowl, whisk together the cake flour, bread flour, baking soda, baking powder, and salt.
  2. Wet Ingredients: In a large mixing bowl, beat the butter, brown sugar, and granulated sugar until light and creamy. Add eggs one at a time, then vanilla extract. Gradually add dry ingredients to wet mixture and mix until just combined. Fold in chocolate disks. Chill dough for 24–72 hours.
  3. Baking: Preheat oven to 350°F. Scoop dough into balls and place on lined baking sheets. Bake for 15–18 minutes. Cool on sheet, then transfer to rack to cool completely.
  4. Dipping: Dip half of each cookie in melted chocolate and place on parchment to set. Sprinkle with sea salt if desired. Allow chocolate to harden before serving or storing.
