For the Italian Drunken Noodles:

  • 12 oz wide egg noodles
  • 1 tablespoon olive oil
  • 1 lb Italian sausage (mild or hot, casings removed)
  • 1 small yellow onion (sliced)
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 3 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • ½ cup dry white wine
  • 1 can (14.5 oz) diced tomatoes (undrained)
  • salt and black pepper to taste
  • ¼ cup chopped fresh parsley
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Cook the noodles: Cook egg noodles according to package directions until al dente. Drain and set aside.
  2. Brown the sausage: In a large skillet, heat olive oil and cook Italian sausage until browned, then set aside.
  3. Sauté veggies: In the same skillet, cook onion, bell peppers, garlic, Italian seasoning, and red pepper flakes.
  4. Deglaze with wine: Add white wine, simmer, then add diced tomatoes and cooked sausage back to the skillet.
  5. Combine and season: Add cooked noodles to the skillet, toss to coat, season with salt and pepper.
  6. Finish and serve: Sprinkle with parsley and Parmesan before serving, if desired.
