For the Italian Drunken Noodles:
- 12 oz wide egg noodles
- 1 tablespoon olive oil
- 1 lb Italian sausage (mild or hot, casings removed)
- 1 small yellow onion (sliced)
- 1 red bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- 3 cloves garlic (minced)
- 1 teaspoon Italian seasoning
- ½ teaspoon red pepper flakes (optional)
- ½ cup dry white wine
- 1 can (14.5 oz) diced tomatoes (undrained)
- salt and black pepper to taste
- ¼ cup chopped fresh parsley
- ¼ cup grated Parmesan cheese (optional)
Instructions
- Cook the noodles: Cook egg noodles according to package directions until al dente. Drain and set aside.
- Brown the sausage: In a large skillet, heat olive oil and cook Italian sausage until browned, then set aside.
- Sauté veggies: In the same skillet, cook onion, bell peppers, garlic, Italian seasoning, and red pepper flakes.
- Deglaze with wine: Add white wine, simmer, then add diced tomatoes and cooked sausage back to the skillet.
- Combine and season: Add cooked noodles to the skillet, toss to coat, season with salt and pepper.
- Finish and serve: Sprinkle with parsley and Parmesan before serving, if desired.
