  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small yellow onion (finely chopped)
  • 2 garlic cloves (minced)
  • 1 ½ cups Arborio rice
  • ½ cup dry white wine (optional)
  • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 4 cups low-sodium chicken broth (warm)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • 2 tablespoons heavy cream (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)
  • lemon zest or juice (optional, for brightness)

Instructions

  1. Set the Instant Pot to Sauté mode. Add the olive oil and butter. Once hot, add the onion and cook for 2–3 minutes until soft.
  2. Stir in the garlic and cook for 30 seconds.
  3. Add the Arborio rice and toast for 1–2 minutes, stirring constantly.
  4. Pour in the white wine (if using) and cook until mostly evaporated.
  5. Add the chicken pieces, warm broth, salt, and pepper. Stir well and press Cancel.
  6. Seal the lid and set the Instant Pot to Manual or Pressure Cook on high for 6 minutes.
  7. Once done, allow natural release for 5 minutes, then quick release any remaining pressure.
  8. Stir in Parmesan and heavy cream if using. Adjust seasoning and add lemon zest or juice if desired.
  9. Garnish with chopped parsley and serve immediately.

Notes

  • For extra creaminess, stir in an additional tablespoon of butter at the end.
  • You can swap chicken for mushrooms or shrimp for a variation.
  • Always use warm broth for better texture in risotto.
