Scale
Ingredients
- 1 1/2 lbs parsnips, peeled and cut into batons (about 2–3 inches long)
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 tablespoon fresh lemon juice
- 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray to prevent sticking.
- Prepare the parsnips: In a large bowl, combine the peeled and cut parsnips with olive oil, honey, fresh lemon juice, thyme, salt, and pepper. Toss thoroughly to coat all the parsnips evenly with the mixture.
- Roast the parsnips: Spread the coated parsnips in a single layer on the prepared baking sheet. Place the sheet in the preheated oven and roast for 25-30 minutes, stirring once halfway through cooking to ensure even browning and tenderness.
- Serve: Remove the parsnips from the oven once they are golden brown and tender. Transfer to a serving dish and garnish with freshly chopped parsley if desired. Serve warm as a flavorful side dish.
Notes
- For a deeper flavor, consider using fresh thyme, but dried thyme works well too.
- Make sure to cut parsnips into uniform sizes to ensure even cooking.
- Adjust honey quantity to taste for more or less sweetness.
- To make this dish vegan, substitute honey with maple syrup.
- Leftovers can be refrigerated for up to 3 days and reheated in the oven to retain crispness.
