Description

Honey Mustard Potatoes are a deliciously tangy and sweet roasted side dish featuring baby potatoes coated in a flavorful blend of Dijon and whole grain mustard, honey, garlic, and fresh herbs. Perfectly crispy on the edges and tender inside, these potatoes complement roasted meats or make a satisfying vegetarian accompaniment.

Ingredients

Scale

Potatoes

  • 2 lbs baby potatoes, halved

Honey Mustard Dressing

  • 2 tablespoons olive oil
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 1 1/2 tablespoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh rosemary or thyme, chopped

Optional Garnish

  • Chopped parsley

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it’s hot enough to roast the potatoes to a crispy, golden finish.
  2. Prepare Honey Mustard Mixture: In a large mixing bowl, whisk together the olive oil, Dijon mustard, whole grain mustard, honey, minced garlic, salt, black pepper, and chopped rosemary until well combined to create a flavorful coating for the potatoes.
  3. Toss Potatoes: Add the halved baby potatoes into the bowl and toss them thoroughly until every piece is evenly coated with the honey mustard mixture.
  4. Arrange on Baking Sheet: Spread the coated potatoes out in a single layer on a parchment-lined baking sheet to allow even roasting and crispiness.
  5. Roast Potatoes: Place the baking sheet in the preheated oven and roast for 30 to 35 minutes, flipping the potatoes halfway through the cooking time to promote even browning and crisp edges.
  6. Finish and Garnish: Once the potatoes are golden brown and crispy on the edges, remove from the oven and if desired, sprinkle with freshly chopped parsley before serving for a fresh, vibrant touch.

Notes

  • To add a spicy kick, include a dash of chili flakes or substitute the whole grain mustard with spicy mustard.
  • These potatoes are a great side dish for roasted meats or can be enjoyed as a flavorful vegetarian option.
