Ingredients
Scale
Potatoes
- 2 lbs baby potatoes, halved
Honey Mustard Dressing
- 2 tablespoons olive oil
- 2 tablespoons Dijon mustard
- 1 tablespoon whole grain mustard
- 1 1/2 tablespoons honey
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh rosemary or thyme, chopped
Optional Garnish
- Chopped parsley
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it’s hot enough to roast the potatoes to a crispy, golden finish.
- Prepare Honey Mustard Mixture: In a large mixing bowl, whisk together the olive oil, Dijon mustard, whole grain mustard, honey, minced garlic, salt, black pepper, and chopped rosemary until well combined to create a flavorful coating for the potatoes.
- Toss Potatoes: Add the halved baby potatoes into the bowl and toss them thoroughly until every piece is evenly coated with the honey mustard mixture.
- Arrange on Baking Sheet: Spread the coated potatoes out in a single layer on a parchment-lined baking sheet to allow even roasting and crispiness.
- Roast Potatoes: Place the baking sheet in the preheated oven and roast for 30 to 35 minutes, flipping the potatoes halfway through the cooking time to promote even browning and crisp edges.
- Finish and Garnish: Once the potatoes are golden brown and crispy on the edges, remove from the oven and if desired, sprinkle with freshly chopped parsley before serving for a fresh, vibrant touch.
Notes
- To add a spicy kick, include a dash of chili flakes or substitute the whole grain mustard with spicy mustard.
