Instructions
- Make the shortbread: In a large bowl, cream together the softened butter and powdered sugar until smooth and fluffy. Mix in vanilla extract. Add flour and salt, and mix until a soft dough forms. Roll the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheet. Flatten each ball gently with your fingers or the bottom of a glass to form a small disc. Bake for 12–14 minutes, or until the edges are lightly golden. Allow to cool completely.
- Make the caramel layer: In a microwave-safe bowl, combine the soft caramels and heavy cream. Microwave in 30-second intervals, stirring each time, until fully melted and smooth. Spoon about 1 teaspoon of caramel onto each cooled cookie and let it set for 10–15 minutes.
- Add the chocolate topping: Melt chocolate chips (and coconut oil or butter, if using) in a microwave-safe bowl in 30-second bursts, stirring between each, until smooth. Spoon or drizzle melted chocolate over the caramel layer of each cookie. Let the chocolate set at room temperature or refrigerate until firm.

- You can shape the cookies into rectangles for a more classic Twix look.
