Chocolate Layer

  • 1 tablespoon coconut oil or butter (optional, for smoother melting)

Instructions

  1. Prepare the shortbread base: Preheat your oven to 350°F and line an 8×8-inch pan with parchment paper. In a mixing bowl, combine the all-purpose flour, softened unsalted butter, powdered sugar, and salt. Mix until a dough forms, then press the dough evenly into the bottom of the prepared pan.
  2. Bake the shortbread: Place the pan in the preheated oven and bake for 18 to 20 minutes, or until the edges are lightly golden. Once baked, remove from the oven and allow it to cool completely to ensure the layers set properly.
  3. Melt the caramel: While the shortbread cools, place the soft caramels and heavy cream in a microwave-safe bowl. Heat in 30-second intervals, stirring thoroughly after each session until the caramel is smooth and fully melted.
  4. Assemble the caramel layer: Pour the melted caramel evenly over the cooled shortbread base. Use a spatula or the back of a spoon to spread it out evenly. Place the pan in the refrigerator and chill for 20 to 30 minutes or until the caramel layer is firm.
  5. Melt the chocolate: In a separate bowl, melt the milk chocolate chips together with the optional coconut oil or butter in the microwave. Heat in 20-second intervals, stirring after each until the chocolate is smooth and fully melted.
  6. Top with chocolate layer: Pour the melted chocolate over the set caramel layer, spreading it evenly to cover the caramel layer completely. Return the pan to the fridge and chill until the chocolate is firm and set.
  7. Cut into bites: Once the chocolate topping is solid, remove the pan from the refrigerator. Using a sharp knife, cut the layered dessert into approximately 36 bite-sized squares. Serve and enjoy!
