Instructions

  1. Prepare Pans: Preheat your oven to 350ºF (175ºC). Grease and flour two 9-inch cake pans to ensure the cake doesn’t stick and set them aside for later use.
  2. Make Cake Batter: In the bowl of an electric mixer fitted with the paddle attachment, combine the sugar, self-rising flour, and strawberry jello powder. Add the thawed frozen strawberries with their juices, vegetable oil, eggs, and ricotta cheese. Mix on medium speed until all ingredients are thoroughly combined and the batter is smooth.
  3. Bake the Cake: Pour the batter evenly into the prepared pans. Place them in the preheated oven and bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
