Instructions

  1. Brown the Sausage: In a large soup pot or Dutch oven, heat the olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook for 6–8 minutes until browned and fully cooked.
  2. Sauté the Vegetables: Add the diced onion, carrots, and celery to the pot. Sauté for about 5 minutes until the vegetables are softened and fragrant.
  3. Add Spices and Garlic: Stir in the minced garlic, dried thyme, oregano, and smoked paprika. Cook for 1 minute more to release the flavors.
  4. Add Lentils and Liquids: Pour in the rinsed lentils, diced tomatoes with their juices, chicken broth, and add the bay leaf. Bring the mixture to a boil over high heat.
  5. Simmer the Soup: Reduce the heat to low and simmer uncovered for 30–35 minutes, or until the lentils are tender and the soup has thickened slightly.
