Description
Delight in these homemade chocolate turtles featuring clusters of toasted pecans, rich caramel, and smooth melted chocolate. Perfect for gifting or a sweet treat, these bite-sized confections combine crunchy nuts with creamy caramel and chocolate in just 45 minutes.
Ingredients
Scale
Pecans
- 1 1/2 cups pecan halves (toasted)
Caramel Layer
- 1 cup soft caramel candies (unwrapped)
- 2 tablespoons heavy cream
Chocolate Coating
- 1 1/2 cups semi-sweet or milk chocolate chips
- Sea salt (optional, for garnish)
Instructions
- Prepare Baking Sheet: Line a baking sheet with parchment paper. Arrange small clusters of 3-4 toasted pecan halves in groups, leaving some space between each cluster to allow for spreading.
- Melt Caramel: In a microwave-safe bowl, combine the unwrapped caramel candies and heavy cream. Microwave in 20-second intervals, stirring after each, until the caramel mixture is completely melted and smooth.
- Apply Caramel: Spoon the melted caramel generously onto each pecan cluster, covering the nuts while leaving the edges of the pecans slightly exposed for texture.
- Chill Caramel: Place the baking sheet with caramel-covered pecans into the refrigerator for 10-15 minutes to let the caramel set firmly.
- Melt Chocolate: In a separate microwave-safe bowl, melt the chocolate chips in 20-second intervals, stirring in between until fully smooth and glossy.
- Coat with Chocolate: Spoon the melted chocolate over each caramel-covered pecan cluster, spreading it evenly to cover the caramel layer completely. Optionally, sprinkle a pinch of sea salt over the top to enhance flavor.
- Set Chocolate Turtles: Allow the chocolate-coated clusters to set either at room temperature or in the refrigerator for faster setting. Once firm, enjoy them right away or package them as beautiful homemade gifts.
