  • 1 (8 oz) can tomato sauce
  • 2 cups beef broth (or chicken broth)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste

  • Shredded cheese
  • Sour cream
  • Chopped green onions
  • Tortilla chips
  • Jalapeños

Instructions

  1. Cook the Ground Meat: In a large skillet over medium heat, cook the ground beef or turkey together with the chopped onion until the meat is fully browned and the onions are soft and translucent. Drain off any excess fat to keep the soup from being greasy.
  2. Transfer to the Slow Cooker: Place the cooked meat and onions into your slow cooker. Add the kidney beans, black beans, corn, diced tomatoes (with or without green chilies), tomato sauce, beef or chicken broth, taco seasoning packet, chili powder, cumin, garlic powder, onion powder, and salt and pepper to taste. Stir everything well to combine.
  3. Cook the Soup: Cover and cook on low heat for 6 to 7 hours or on high heat for 3 to 4 hours. Stir occasionally if possible. The soup is done when all the flavors have melded together and the soup is thoroughly heated and aromatic.
  4. Serve: Give the soup a good stir and taste for seasoning adjustments. Add more salt, pepper, or spices if needed to suit your preference.
