For the brownie base:
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
For the raspberry mousse:
- 1 1/2 cups fresh or frozen raspberries
- 1/4 cup sugar
- 1 tablespoon lemon juice
- 1 tablespoon water
- 1 teaspoon unflavored gelatin
- 1 cup heavy cream
- 1/4 cup powdered sugar
For garnish:
- fresh raspberries
- mint leaves
- chocolate shavings (optional)
Instructions
- Preheat the oven and prepare the pan: Preheat the oven to 350°F and grease a 9×13-inch pan.
- Make the brownie base: Whisk together melted butter and sugar, add eggs and vanilla, mix in cocoa powder, flour, salt, and baking powder. Bake, cool, and cut out heart shapes.
- Prepare the raspberry mousse: Cook raspberries, sugar, and lemon juice, strain, dissolve gelatin, cool. Whip cream and sugar, fold in raspberry mixture. Fill molds with brownie hearts and mousse. Chill.
- Garnish and serve: Unmold, garnish with raspberries, mint leaves, and chocolate shavings. Serve and enjoy!
