For the Caramel Layer:

  • 1/3 cup almond butter or peanut butter
  • 1/4 cup maple syrup
  • 2 tablespoons coconut oil
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

For the Chocolate Topping:

  • 1/2 cup dark chocolate chips
  • 1 teaspoon coconut oil

Instructions

  1. Prepare the Base: Line a mini muffin tin with 12 liners. In a bowl, combine almond flour, melted coconut oil, maple syrup, and a pinch of salt. Mix until a soft dough forms. Press about 1 tablespoon of the dough into the bottom of each liner to form a crust. Place the tray in the freezer for 10 minutes to set.
  2. Make the Caramel Layer: While the base chills, combine almond butter, maple syrup, coconut oil, vanilla extract, and a pinch of salt in a small saucepan over low heat. Stir continuously until the mixture is smooth and slightly thickened, about 2 to 3 minutes. Remove from heat and let it cool slightly. Spoon about 1 teaspoon of this caramel onto each chilled crust. Return the cups to the freezer for another 10 minutes.
  3. Prepare the Chocolate Topping: Melt the dark chocolate chips with coconut oil in the microwave using 30-second bursts, stirring well between each until fully smooth. Spoon a layer of melted chocolate over the caramel in each cup. Return the cups to the freezer for 10 to 15 minutes or until the chocolate is fully set.
  4. Storage and Serving: Store the finished Twix cups in the refrigerator or freezer to keep them firm. Enjoy them chilled for the best texture and flavor experience.
